Waldorf Salad

 
 

Shopping List

  • Turkey breast  

  • Apple  

  • Red grapes 

  • Celery stalks  

  • Light mayonnaise 

  • Walnuts  

  • Fresh Italian parsley leaves  

  • Lemon juice  

  • Butter lettuce  

  • Dried cranberries   

Directions:  

  1. Combine in a large bowl: 

    2 cups cooked turkey breast, medium dice (about 8 ounces) 

    1 medium tart, crisp apple, such as Granny Smith, cored and cut into medium dice 

    1 cups  seedless red grapes, halved*  

    3 medium celery stalks, cut crosswise into 1/4-inch pieces 

    3/4 cups light mayonnaise 

    1/2 cups walnuts, toasted and coarsely chopped 

    2 Tbsp.  coarsely chopped fresh Italian parsley leaves 

    1 Tbsp.  freshly squeezed lemon juice

  2. Taste and season with additional salt and pepper as needed. 

  3. Optional: Serve on leaves of butter lettuce. 

          * 2/3 cups dried cranberries
