Shopping List:
Turkey Tenderloin
Salsa
Garlic
Cumin Red pepper sauce
Salt and pepper
Cheddar cheese
Tortilla shells
Sour cream
Directions:
Cook 1 turkey tenderloin in a skillet. Shred turkey meat with two forks until finely shredded
In a medium-sized bowl, mix together:
1/2 cup salsa 2 cloves garlic, minced
2 tsp ground cumin Red pepper sauce to taste
Salt and pepper to taste
1 cup shredded cheddar cheese
Roll about 2.5 ounces (1/3 Cup) of the taquito mixture in a flour tortilla.
For a crispy tortilla shell, place taquitos seam side down on a baking sheet. Spray the top outsides of the tortillas with cooking spray. Bake in a hot oven at 425 - 450 degrees for 8 to 10 minutes. Or deep fat fry them in oil for 5-7 minutes. For a soft tortilla shell, place the taquitos seam side down in a casserole dish. Cover the dish with foil and bake in a 350-degree oven for 25 to 30 minutes.
Optional - serve with sour cream and salsa.
