Spicy Tofu, Edamame & Turkey Chili, Chef Raul Murillo, Iowa Events Center
Ingredients
Ground Turkey or whole cut turkey – 1lb
White Onion – 1 medium onion
Diced peppers - ½ cup
Firm tofu – ½ lb
Cumin – ½ tsp
Paprika – 1 tsp
Chili Powder – 1 tbsp
Tabasco - dash
Cayenne pepper – ¼ tsp
Worcestershire sauce – 1 tbsp
Soy milk – 2 cups
Oil
Chopped Garlic – 1 tbsp
Tomato paste – 10oz
Diced tomatoes – 1 cup
Salt and Pepper to taste
Edamame – 1 lb
Garbanzo beans – 1 lb
Tomato juice – 1 cup
Directions
Sautee peppers and onions in big pot
Add chopped garlic
Add ground turkey and cook
Once turkey is cooked add diced tomatoes, edamame and garbanzo beans
Add tomato paste, tomato juice, Worcestershire, soy milk and bring to a boil
Add dried seasonings
Add tofu in last 10 minutes of cooking
Garnish with Greek yogurt and shredded pepperjack cheese
