Spicy Tofu, Edamame & Turkey Chili, Chef Raul Murillo, Iowa Events Center

Ingredients

  • Ground Turkey or whole cut turkey – 1lb

  • White Onion – 1 medium onion

  • Diced peppers - ½ cup

  • Firm tofu – ½ lb

  • Cumin – ½ tsp

  • Paprika – 1 tsp

  • Chili Powder – 1 tbsp

  • Tabasco - dash

  • Cayenne pepper – ¼ tsp

  • Worcestershire sauce – 1 tbsp

  • Soy milk – 2 cups

  • Oil

  • Chopped Garlic – 1 tbsp

  • Tomato paste – 10oz

  • Diced tomatoes – 1 cup

  • Salt and Pepper to taste

  • Edamame – 1 lb

  • Garbanzo beans – 1 lb

  • Tomato juice – 1 cup

Directions

  • Sautee peppers and onions in big pot

  • Add chopped garlic

  • Add ground turkey and cook

  • Once turkey is cooked add diced tomatoes, edamame and garbanzo beans

  • Add tomato paste, tomato juice, Worcestershire, soy milk and bring to a boil

  • Add dried seasonings

  • Add tofu in last 10 minutes of cooking

  • Garnish with Greek yogurt and shredded pepperjack cheese
