Skillet Pesto Pasta

 
 

Shopping List

  • Rotini  

  • Frozen broccoli 

  • Garlic cloves  

  • Olive oil 

  • Turkey tenderloin (cut into bite sized pieces)  

  • Pesto  

  • Lemon  

  • Shredded mozzarella cheese  

  • Finely shredded parmesan 

  • Salt and pepper to taste  

Directions

  1.  Boil water and cook until tender: 

    1 box (12-16 oz) of rotini 

  2. In last minute of cooking pasta add: 

    1 bag (16 oz) of frozen broccoli 

  3.  While pasta is cooking, sauté 

    2 cloves of garlic in 1 1/2 Tbsp. of olive oil 

  4. Cook for a minute or two, then add in 1.5 lbs. – 2 lbs. turkey tenderloin (cut into bite sized pieces) and sprinkle turkey tenderloin with salt and pepper 

  5. Cook until the turkey is no longer pink, then add 1 jar of pesto (most jars are around 1 cup) and squeeze ½ - 1 lemon juice into skillet 

  6. Stir together 

  7. Drain pasta and broccoli, add to skillet. 

  8. Stir together and add: 8 oz. shredded mozzarella cheese and 1/3 cups finely shredded parmesan 

  9. Stir until cheese is melted.
