Quesadillas

 
 

Shopping List

  • Onion 

  • Pear 

  • Whole berry cranberry sauce  

  • Fresh cilantro 

  • Jalapeno pepper 

  • Chili powder 

  • Lime 

  • Red pepper 

  • Green pepper

  • Monterey Jack Cheese 

  • Flour tortillas 

  • Turkey deli meat 

  • Sour cream 

Directions:  

  1. Prepare salsa.  Mix ingredients, cover and refrigerate. 

    1 small onion, diced 

    1 pear, cored diced 

    1 cups whole berry cranberry sauce 

    ¼ cups chopped fresh cilantro 

    1 Jalapeno pepper, seeded and minced 

    ½ tsp. chili powder 

    Juice of 1 small lime 

  2. For the quesadillas - Heat olive oil over medium-high heat in a 12-inch non-stick skillet.  Sauté onions and peppers until just tender.  Season with salt and pepper. Set aside.   

    ½ small onion, long slice 

    ½ red pepper, seeded, long sliced 

    ½ green pepper, seeded, long sliced 

  3. Prepare Quesadillas.   For each quesadilla, evenly spread ¼ of the cheese, turkey deli meat and onion/pepper mix over one-half of the tortilla.  Fold other half of tortilla over the filled half.  Repeat for the remaining three tortillas.   

  4. Return the skillet to medium high heat.  Coat the pan with cooking spray and add one quesadilla to the pan.  Cook 2-minutes on each side or until slightly browned and cheese melts.  Repeat with the remaining quesadillas.   Cut each Quesadilla into 3 wedges.  Serve with Cranberry Salsa.  Garnish with sour cream if desired.
