Mini Turkey Empanadas

 
 

Shopping List

  • Ground turkey 

  • Taco Seasoning 

  • Crushed tomatoes 

  • Refrigerated pie crust 

  • Sour cream 

  • Green onions 

Directions:  

  1. Preheat oven to 400 degrees. 

  2. In a large skillet over medium-high heat, cook 1 lb. ground turkey breast and stir until browned. 

  3. Stir in and cook until liquid is evaporated: 

    2 Tbsp. Taco Seasoning 

    1 (16 oz.) can crushed tomatoes 

  4. Remove turkey mixture from the heat and cool. 

  5. Using a 3-inch round biscuit cutter (or other kitchen item) cut rounds from pie crusts. 

  6. Spoon a heaping tsp.  of the filling the center of each round.  Fold pastry in half and pinch edges together to seal. 

  7. Place on a baking sheet.  Spray empanadas with nonstick spray to help brown.   

  8. Bake in preheated oven for 15 to 20 minutes, until empanadas are golden brown. 

  9. Serve with sour cream and green onions, chopped.
