Shopping List

  • Italian turkey sausage links, casings removed (OR) ground Italian turkey sausage 

  • Onion 

  • Carrots 

  • Garlic cloves 

  • Reduced-sodium chicken broth 

  • Canned diced tomatoes 

  • Cheese tortellini 

  • Spinach 

  • Basil 

  • Oregano 

  • Crushed red pepper flakes 

  • Shredded Parmesan cheese, optional

Directions

  1. Cook 16 oz. Italian turkey sausage links, casings removed (OR) ground Italian turkey sausage  

    in a large saucepan 

  2. Add, then reduce heat and simmer, uncovered, for 10 minutes. 

    1 medium onion, chopped  

    3 large carrots, shredded 

    6 garlic cloves, minced 

    2 cans (14-1/2 oz. each) reduced-sodium chicken broth 

    1-3/4 cups water 

    1 can (14-1/2 oz.) diced tomatoes, undrained 

    ¼ cups minced fresh basil or 2 Tbsp. dried basil 

    1/4 tsp. pepper 

    1 Tbsp. oregano 

    1 tsp. crushed red pepper flakes 

  3. Add 1 package (9 oz.) cheese tortellini; return to a boil. Cook for 7-9 minutes or until tender, stirring occasionally.  

  4. Reduce heat; add 1 package (6 oz.) fresh baby spinach, coarsely chopped, cook 2-3 minutes longer or until spinach is wilted.  

  5. Serve with shredded Parmesan cheese, if desired.
