Cream Cheese Filled Tenderloins

  • Cream cheese 

  • Garlic & Herb goat cheese  

  • Egg yolks  

  • Sweet red onion 

  • Breadcrumbs 

  • Turkey tenderloins  

  • Turkey bacon 

Directions:  

  1. Sauté ½ cups diced sweet red onion in oil in a small skillet or a small bowl in the microwave. 

  2. Mix together, cover and chill: 

    6 oz. cream cheese, softened  

    2 oz. garlic & herb goat cheese 

    2 egg yolks 

    Sautéed onions 

    ¼ cups breadcrumbs 

  3. Butterfly 2 turkey tenderloins by cutting in half down the long side of the tenderloin, but not all the way through the loin. Gently pound flat and to an even thickness. Season with salt and pepper.  

  4. Place 3 bacon strips on plastic wrap, top with turkey tenderloin. Spread the cheese filling on the turkey, to within 1-inch of the edges. Repeat for second tenderloin.  

  5. Tightly roll into a pinwheel, wrap tightly and place in freezer for about 15 minutes.  

  6. Remove plastic wrap. Place on a rack in a roasting pan and roast in a preheated 325-degree F oven for about 35-40 minutes or until the internal temperature reaches 165 degrees F.  

  7. Allow to rest for 5-10 minutes before slicing.
