Bruschetta

 
 

Shopping List

  • Turkey cutlets 

  • Salt 

  • Black pepper 

  • Small onions, finely diced 

  • Small to Medium yellow bell peppers, cut into 1-inch pieces 

  • Olive oil 

  • Cloves garlic, minced 

  • Tomatoes, seeded and coarsely chopped 

  • Loaf (about 16 inches long) Italian bread, sliced lengthwise in half 

  • Olive oil 

  • Fresh basil leaves, cut into very thin strips 

Directions

  1. Season turkey cutlets with ½ tsp. salt and ½ tsp. black pepper. 

  2. Grill or broil 1 lb. turkey cutlets, turning occasionally every 4 to 5 minutes or until cooked to an internal temperature of 165 degrees F. Keep warm. 

  3. In medium bowl combine and toss until evenly coated and grill in a grill wok or on grill screen until tender.  

    2 small onions, finely diced 

    2 small to medium yellow bell peppers, cut into 1-inch pieces 

    2 Tbsp. olive oil 

    2 cloves garlic, minced 

    ½ tsp. salt 

    ½ tsp. pepper 

  4. Add 2 tomatoes, seeded and coarsely chopped and continue grilling until heated through. 

  5. Brush bread with oil. Grill bread, cut-side-down, just until toasted. 

  6. To serve, cut toasted bread into 8 pieces. Cut turkey cutlets into strips and evenly divide onto each piece of toasted bread. 

  7. Spoon grilled vegetables over turkey and sprinkle with basil.
