Turkey Roulade with Smoked Tofu & Edamame Coulis, Chef Raul, Iowa Events Center

Roulade

Smoke 1 pound tofu.

Pounded out 1 turkey breast.

Mix in a bowl:

  • 1 lb. smoked tofu, crumbled

  • 4 oz. pine nuts

  • 1 oz. spinach

  • 3 oz. roasted red peppers

Add salt and pepper to taste

Spread tofu mixture over turkey breast, layer with sliced Swiss cheese.

Roll turkey tight and wrap in plastic.

Steam roulade for 5 minutes to seal shape.

Take out of plastic.

Finish in oven ~40 minutes or until 165F.  Let turkey rest.  Slice into ¼” sections.

Coulis

Steam 6 oz. edamame beans

Puree edamame beans with:

  • 3-4 oz. soy milk

  • 1 Tablespoon green curry paste

  • 2 oz. soft tofu

  • Add salt, pepper, and garlic to taste

Fried Plantain Chip

Slice plantains into 1/2” coins. 

Fry to soften, smash flat, and finish in fryer, season with salt and pepper.

Assembly

Place 1 slice roulade on plantain chip.

Drizzle with coulis.

Garnished with micro greens.
