These slow cooker BBQ turkey sandwiches are easy and delicious.  Great for get-togethers or potlucks, cooking turkey in the crock pot makes it tender and delicious.

Ingredients
  1. 2 pounds turkey (thighs and/or tenderloins)
  2. 1/3 cup white vinegar
  3. 1/3 cup ketchup
  4. 2 teaspoons Worcestershire sauce
  5. 1 teaspoon freshly ground black pepper
  6. 1 teaspoon hot pepper sauce
  7. 1/2 teaspoon salt
  8. ½ lemon, quartered
  9. 4 burger buns, split horizontally and toasted
Instructions
  1. Wash your hands.
  2. In a slow cooker, combine vinegar, ketchup, Worcestershire sauce, pepper, hot sauce, salt and lemon quarters. Fold in turkey. Cover and cook on High for 4 to 5 hours or on Low for 8 to 9 hours.
  3. Remove lemon quarters. Remove turkey from the bones if needed. Shred the turkey into smaller pieces.
  4. To serve, spoon hot barbecue mixture over bottom half of toasted burger buns. Top with other half.
  5. Serves 4

Turkey Swiss Mega Sub with Ranch Aioli Recipe

Spring has been teasing us a little bit.  We’ve had a couple of warm days in Central Iowa, followed by some cold, windy and wet days.  Today is one of the latter types.  It’s discouraging, especially for our farmers who want to be planting, but I suppose it is to be expected.  As they say, “April showers bring May flowers!”

Today, I’m pretending it’s 70 degrees and sunny, like it was Friday and Saturday, and craving this turkey sandwich recipe from FunnyLove Blog.

Ingredients
  1. Butter-flavored nonstick spray OR 1/4 cup butter or margarine, softened
  2. 8 slices rye bread
  3. 1/4 cup Thousand Island dressing
  4. 4 slices Swiss cheese
  5. 1 pound thinly sliced cooked turkey breast
  6. 1/2 cup sauerkraut, well drained
Instructions
  1. 1. Wash hands.
  2. 2. Spray one side of each bread slice with nonstick spray. Spread the other side of each slice of bread with dressing.
  3. 3. Top four of the bread slices (dressing side up) with 1 slice cheese, 4 ounces sliced turkey and 2 tablespoons well-drained sauerkraut. Place remaining bread slices atop each sandwich.
  4. 4. Heat a large skillet over medium high heat. Cook sandwiches until browned, then turn and cook until heated through and cheese is melted.
Notes
  1. Makes 4 servings.

Ingredients
  1. 1 large lime, zested and juiced
  2. 2 tablespoons minced green onion
  3. 2 tablespoons crunchy peanut butter
  4. 1/4 teaspoon minced fresh ginger root
  5. 1/4 teaspoon red pepper flakes
  6. 2 tablespoons soy sauce
  7. 1 tablespoon minced cilantro
  8. 2 teaspoons light brown sugar
  9. 1 teaspoon minced fresh garlic
  10. 4 (8-inch) whole wheat tortillas
  11. 1 pound roasted turkey breast, thinly sliced OR sliced turkey deli meat
  12. 1/4 cup thinly sliced red onion
  13. 1 tomato, seeded and diced
  14. 3/4 cup lettuce, washed, drained, chilled and shredded
  15. 4 teaspoons cilantro
Instructions
  1. 1. Wash hands.
  2. 2. In a medium bowl combine the first 9 ingredients for the Peanut Sauce.
  3. 3. Spread each tortilla with Peanut Sauce. Layer each with 4 ounces sliced turkey. Evenly sprinkle each with onion, tomato, lettuce and cilantro.
  4. 4. Roll up tightly and cut on the diagonal. Serve chilled.
