 This smoked turkey primavera is a great way to get your veggies!  With 6 cups of your favorite winter vegetables like broccoli, cauliflower, carrots and mushrooms and a delicious sauce, this dish is good for you (and your tastebuds!)

Ingredients
  1. Smoked Turkey Primavera
  2. 6 Cups fresh winter vegetables, i.e. broccoli, cauliflower, carrots, mushrooms
  3. 2 Tablespoons margarine
  4. 1/2 Cup reduced-sodium chicken bouillon
  5. 1/2 Cup skim milk
  6. 1/2 Cup plus 2 tablespoons Parmesan cheese, grated
  7. 10 Ounces spaghetti or linguini, cooked
  8. 1 Pound SMOKED TURKEY, (white or dark) cut into 1/2-inch cubes
  9. freshly ground black pepper, to taste
Instructions
  1. Cut broccoli and cauliflower into florets. Slice carrots and stemmed mushrooms into medium
  2. slices.
  3. In large skillet, over medium-high heat, saute vegetables in margarine until crisp-tender. Add
  4. bouillon and milk. Cook 1 to 2 minutes or until bubbly. Fold in 1/2 cup cheese, cooked pasta
  5. and turkey. Cook 1 to 2 minutes or until mixture is heated throughout.
  6. Serve on large platter, topped with remaining cheese and pepper to taste.

You know those cute cookbooks elementary classes make for Mother’s Day? The ones where the kids write their interpretation of their mom’s recipe? I once saw a recipe for hamburger helper, written by a five year old, that said, “Open the box. Make the noodles.  Mix it up.”

 

Well, this isn’t quite that easy, but it’s close!  And Homemade TURKEY Cheeseburger Helper will  quickly earn a spot in your kid’s school cookbook.

Ingredients
  1. 2 lb. lean ground turkey
  2. 2 ½ tablespoon cornstarch
  3. 4 ½ teaspoons paprika
  4. 2 teaspoons onion powder
  5. 2 teaspoons garlic powder
  6. 1 ½ teaspoons salt
  7. 2 teaspoons sugar
  8. 1 teaspoon pepper
  9. 2 ½ cups hot water
  10. 5 cups skim milk
  11. 4 cups (13 oz. box) whole grain penne pasta (or other small pasta)
  12. 2 ½ cups shredded sharp cheddar cheese
Instructions
  1. 1. Brown ground turkey in a large pot. Drain and return to pot.
  2. 2. In a small bowl whisk together cornstarch and seasonings with 1 cup milk. Combine seasoning mixture, hot water, 4 cups skim milk and pasta with the ground turkey. Stir to combine, and bring to a boil. Reduce the heat, place a lid on top, and simmer for 10 minutes, or until pasta is al dente, stirring a couple of times.
  3. 3. Turn off the heat and stir in cheddar cheese until melted. Let stand for 5 minutes, or until sauce is thickened.

Frozen chopped spinach makes a colorful combination for this meatball recipe. Top with a creamy alfredo or marinara sauce for serving.

Ingredients
  1. 1 box frozen spinach, defrosted and well drained
  2. 1 1/3 pound ground turkey
  3. 1 cup finely chopped onion
  4. 3 cloves garlic, chopped
  5. 1 large egg
  6. 1/4 cup milk
  7. 3/4 cup bread crumbs
  8. 1/2 cup grated Parmesan cheese
  9. Salt and black pepper
  10. Extra-virgin olive oil, for drizzling
Instructions
  1. Wash hands. Preheat oven to 400 degrees F.
  2. In a large bowl thoroughly combine all ingredients except olive oil and mix well.
  3. Form into 12 large balls and drizzle with extra-virgin olive oil and arrange on a nonstick cookie sheet. Bake for 20 minutes or until no longer pink in the middle.
  4. Place balls on dinner plates and top with favorite sauce and garnish with parsley, if desired.
Notes
  1. Makes 6 servings. Serve with noodles. 1 serving: calories 332, protein 25 g, cholesterol 121 mg, sodium 568 mg, carbohydrate 14 g, fiber 2 g

  1. 8 ounces rotini pasta, cooked according to package directions
  2. 1 cup cubed cooked turkey
  3. 1 (4 ounce) can sliced black olives, drained
  4. 2 ounces Pepper Jack cheese, cut into 1/4 inch cubes
  5. 2 cups seeded and chopped tomatoes, divided
  6. 4 green onions, thinly sliced
  7. 1 teaspoon cilantro leaves
  8. 3 tablespoons light olive oil
  9. 2 tablespoons white wine vinegar
  10. 1 teaspoon minced garlic
  11. 1/2 teaspoon cumin
  12. 1/2 teaspoon chili powder
Instructions
  1. 1. Wash hands.
  2. 2. In large bowl combine pasta, turkey, olives, cheese, 1 cup tomatoes and green onion.
  3. 3. In blender or food processor combine cilantro, remaining tomatoes, oil, vinegar, garlic, cumin and chili powder. Process until smooth.
  4. 4. Combine dressing and salad mixture. Toss to coat. Refrigerate until serving.

  1. 1 pound cooked turkey
  2. 5 ounces angel hair pasta, cooked and drained
  3. 2 cups shredded fresh spinach
  4. 2 cups diced Granny Smith apples
  5. 2 cups grated carrot
  6. 2 cups peeled and diced zucchini
  7. 2 cups chopped dry roasted peanuts
  8. 2 tablespoons chopped fresh basil
  9. 1 cup light soy sauce
  10. 1 tablespoon lime juice
  11. 1 tablespoon brown sugar
  12. 1/2 teaspoon minced fresh ginger root
  13. 1 clove garlic, minced
  14. 1 tablespoon crushed red pepper flakes
Instructions
  1. Cut turkey into 1/2 × 3-inch strips. In a large bowl combine turkey, pasta, spinach, apples, carrot, zucchini, peanuts and basil. In a small bowl combine remaining ingredients. Pour dressing over turkey mixture and toss to combine. Refrigerate until serving. Makes 10 servings.
