Slow Cooker Turkey Tacos

Turkey tacos are a favorite among turkey lovers, and this slow cooker version will have them coming back for seconds.  Tender turkey breast with avocado, salsa, and pepper jack cheese combine for an easy family meal that cooks in the crock pot.

Ingredients
  1. 2 onions, coarsely chopped
  2. 6 pounds bone-in turkey breast, skin and fat removed
  3. 1 (10 ounce) can enchilada sauce
  4. 8 hard taco shells
  5. 3 cups shredded romaine lettuce
  6. 1 small avocado, pitted, peeled and chopped
  7. 1 cup tomato salsa
  8. 1 cup shredded pepper jack cheese
Instructions
  1. Place onions in the bottom of a slow cooker.
  2. Sprinkle turkey with salt and place in slow cooker, meat side up. Cover and cook on low until internal temperature of turkey registers 165 degrees, about 4 – 6 hours.
  3. Remove turkey meat from bone, shred it then toss with enchilada sauce.
  4. Place turkey in taco shell and top with lettuce, avocado, salsa and shredded cheese.

  2. Vegetable oil
  3. 1 green pepper, cut into thin strips
  4. 1 red pepper, cut into thin strips
  5. 1 yellow pepper, cut into thin strips
  6. 1 small onion, sliced thinly
  7. 1 pound sliced turkey strips
  8. 1 package dry Italian salad dressing mix
  9. Water as needed
Serve with
  1. Tortillas
  2. Salsa
  3. Sour Cream
  4. Shredded Cheddar cheese
  5. Lettuce
Sauté and remove from the pan
  1. Vegetable oil
  2. 1 green pepper, cut into thin strips
  3. 1 red pepper, cut into thin strips
  4. 1 yellow pepper, cut into thin strips
  5. 1 small onion, sliced thinly
To the warm pan add
  1. Vegetable oil

Ingredients
  1. 1 Cup chopped yellow onion
  2. 1 Clove garlic, minced
  3. 1 Teaspoon dried oregano leaves
  4. 1/4 Teaspoon each salt and ground black pepper
  5. 1 Pound Shredded Cooked Turkey
  6. 1-2/3 Cups chunky salsa, drained of excess juices
  7. 1-1/2 Cups fat-free refried black beans with jalapeño chile peppers
  8. 1 (4 Ounce) can diced green chile peppers
  9. 6 Large whole wheat tortillas
  10. 3/4 Cup light sour cream
  11. 6 Ounces guacamole
  12. 1 Cup shredded Mexican Blend cheese
Instructions
  1. 1. Preheat the oven to 375°F. Spray a baking sheet with nonstick cooking spray.
  2. 2. In a large heavy nonstick skillet, over medium heat, cook onion until transparent. Add garlic, oregano, salt, pepper turkey and cook until the garlic is fragrant.
  3. 3. Add the salsa, beans and diced chiles. Cook and stir until most liquid evaporates.
  4. 4. Lay the tortillas out flat and portion the turkey mixture evenly down the center of each tortilla. Fold the right and left sides of the tortilla over the filling, then the top and bottom, making an envelope that encloses the turkey mixture.
  5. 5. Place seam side down on prepared baking sheet. Bake for approximately 10 minutes or until slightly crispy.
  6. 6. Serve with the sour cream, guacamole and cheese.

Mini Turkey Empanadas

Katie here – I made these mini-turkey empanadas as part of our big Food Photography day.  To be honest, I didn’t even know what empanadas were, and I was really concerned that the empanadas would be TOO mini.

But they weren’t.  They were perfect.  As soon as they were cool enough to touch, I was sampling them, and my friend and I quickly devoured the extras that weren’t needed for the photo shoot.

Although the pie crust adds some calories, ground turkey breast is so lean that these still come in under 400 calories per serving.  And the filling was so absolutely delicious – I’d use it in a tortilla or on top of nachos, too.

One last thing I have to add – these would be a great snack to freeze and reheat, and of course they’d be great for the big game!

 

Mini Turkey Empanadas

Ingredients
  1. 1 pound ground turkey
  2. 1 cup chopped onion
  3. 1/2 cup chopped green bell pepper
  4. 1 clove garlic, minced
  5. 1 (16 ounce) can tomatoes, drained and crushed
  6. 1 tablespoon chopped parsley
  7. 1 teaspoon dried cilantro
  8. 1 teaspoon cumin
  9. 1/2 teaspoon dried oregano leaves
  10. 1/2 teaspoon crushed red pepper flakes
  11. 1/8 teaspoon black pepper
  12. 2 (15 ounce) packages refrigerated pie crusts (4 crusts)
Instructions
  1. 1. Wash hands.
  2. 2. In large nonstick skillet over medium-high heat, cook and stir turkey, onion, green pepper and garlic for 5 to 6 minutes or until turkey is no longer pink and vegetables are tender.
  3. 3. Stir in tomatoes, parsley, cilantro, cumin, oregano, red pepper flakes and pepper. Reduce heat to medium and cook 10 minutes, stirring constantly, or until liquid is evaporated. Remove skillet from heat and cool.
  4. 4. Using a 3 inch round biscuit cutter, cut 12 rounds from each pie crust for a total of 48.
  5. 5. Spoon heaping teaspoon of filling in center of each round. Fold pastry in half and pinch edges together to seal.
  6. 6. Lightly coat 2 (15x10x1-inch) baking sheets with nonstick spray. Place empanadas on baking sheets and bake in a preheated 400 degree F oven for 15 to 20 minutes or until mini empanadas are golden brown.
Notes
  1. Makes 12 servings (4 per serving)
  2. Serve with sour cream and chopped green onion.

  1. 1 teaspoon chili powder
  2. 1 teaspoon cumin
  3. 1 teaspoon salt
  4. 1/4 teaspoon cayenne pepper
  5. 1 pound turkey tenderloin
  6. 4 teaspoons olive oil, divided
  7. 1/4 cup lime juice
  8. 1/3 cup chopped onion
  9. 1 jalapeno pepper, seeded and minced
  10. 1 (15 ounce) can black beans, rinsed and drained
  11. 1 (8 3/4 ounce) can corn, drained
  12. 1/3 cup chopped tomato
  13. 2 tablespoons fresh cilantro, chopped
  14. 1 lime, cut in quarters
Instructions
  1. 1. Wash hands.
  2. 2. In small bowl, combine chili powder, cumin, salt and cayenne pepper; sprinkle 1/2 of mixture over turkey.
  3. 3. In medium nonstick skillet over medium-high heat, brown turkey in 2 teaspoons oil for 3 to 4 minutes on each side.
  4. 4. Add lime juice, cover, and reduce heat to low. Cook 8 to 10 minutes or until meat is no longer pink in center and meat thermometer reaches 170 degrees Farenheit.
  5. 5. In medium nonstick skillet over medium-high heat, cook and stir onion and jalapeno pepper in remaining oil for 2 to 3 minutes or until onion softens.
  6. 6. Add beans, corn, tomatoes, cilantro, and remaining mixture of chili powder, cumin, salt, and cayenne pepper. Cook 5 to 10 minutes or until mixture is heated throughout.
  7. 7. To serve, slice turkey into medallions and squeeze a lime wedge over each serving. Serve with salsa.

  1. 2 cups cubed cooked turkey OR 1 pound ground turkey, cooked
  2. 1 (1 1/4 ounce) package taco seasoning mix
  3. 4 (6-inch) corn tortillas
  4. 1/4 cup canned refried beans
  5. 1/2 cup (2 ounces) Pepper Jack cheese, shredded
  6. 1/2 cup chopped tomatoes
  7. 1/2 cup shredded lettuce
  8. 2 tablespoons chopped onion
  9. 1/4 cup taco sauce
Instructions
  1. 1. Wash hands.
  2. 2. In large skillet over medium heat, combine turkey and taco seasoning with measurement of water recommended on seasoning package. Bring mixture to a gentle boil; immediately reduce heat and simmer 5 minutes, stirring occasionally.
  3. 3. Arrange tortillas on large cookie sheet. Bake in a preheated 375 degree F. oven 5 to 7 minutes or until tortillas are crispy and lightly browned.
  4. 4. Spread each tortilla with one tablespoon beans. Top with 1/4 turkey mixture and cheese. Return to oven 2 to 3 minutes or until cheese is melted.
  5. 5. To serve, top with tomatoes, lettuce, onions and taco sauce.

  1. 2 cups (8 ounces) shredded cheddar cheese OR Colby-Jack cheese
  2. 12 (8 inch) flour tortillas
  3. 1 1/2 pounds smoked OR cooked turkey breast, shredded
  4. 3/4 cup diced mild green chilies
  5. 2 teaspoons vegetable oil
Instructions
  1. 1. Wash hands.
  2. 2. Sprinkle cheese on half the tortillas. Top with turkey meat and chilies. Cover with remaining tortillas.
  3. 3. Heat a lightly oiled skillet over medium-high heat. Cook each quesadilla until golden brown and crisp, about 2 to 3 minutes per side. (Or, place on a baking sheet and bake in a preheated 400 degree oven for 10 to 12 minutes.)
  4. 4. Cut into wedges.

  1. 1 pound ground turkey
  2. 1 egg, beaten
  3. 2 cloves garlic, minced
  4. 1/4 cup finely chopped onion
  5. 1/4 cup dry breadcrumbs
  6. 1 teaspoon chili powder
  7. 1/2 teaspoon cumin
  8. 1/2 cup crushed tortilla chips
  9. 3/4 cup fat-free sour cream
  10. 1/2 cup salsa
Instructions
  1. 1. Wash hands.
  2. 2. In medium bowl combine turkey, egg, garlic, onion, breadcrumbs, chili powder and cumin. Shape into approximately 36, 3/4 inch balls.
  3. 3. Place tortilla chips in self-sealing plastic bag. Add meatballs to bag and toss gently to coat meatballs thoroughly. Wash hands.
  4. 4. Lightly coat 15x10x1-inch baking pan with nonstick spray and arrange meatballs. Bake in preheated 350 degree oven for 20 minutes or until turkey is no longer pink in center.
  5. 5. In small bowl combine sour cream and salsa. Use as dip for meatballs.
