Slow Cooker Turkey Tacos

Turkey tacos are a favorite among turkey lovers, and this slow cooker version will have them coming back for seconds.  Tender turkey breast with avocado, salsa, and pepper jack cheese combine for an easy family meal that cooks in the crock pot.

Ingredients
  1. 2 onions, coarsely chopped
  2. 6 pounds bone-in turkey breast, skin and fat removed
  3. 1 (10 ounce) can enchilada sauce
  4. 8 hard taco shells
  5. 3 cups shredded romaine lettuce
  6. 1 small avocado, pitted, peeled and chopped
  7. 1 cup tomato salsa
  8. 1 cup shredded pepper jack cheese
Instructions
  1. Place onions in the bottom of a slow cooker.
  2. Sprinkle turkey with salt and place in slow cooker, meat side up. Cover and cook on low until internal temperature of turkey registers 165 degrees, about 4 – 6 hours.
  3. Remove turkey meat from bone, shred it then toss with enchilada sauce.
  4. Place turkey in taco shell and top with lettuce, avocado, salsa and shredded cheese.

Ingredients
  1. 8 (4 ounce) turkey breast cutlets
  2. 8 thin slices turkey deli ham
  3. 8 thin slices Swiss cheese
  4. 2 tablespoons butter
  5. 1 (10 3/4 ounce) can cream of mushroom soup
  6. 3 tablespoons sherry
  7. 1/4 teaspoon black pepper
Instructions
  1. 1. Lightly flatten turkey cutlets between plastic wrap by tapping with the bottom of a skillet.
  2. 2. Place one slice of ham and one slice of cheese on top of each cutlet. Roll up and secure with a toothpick. Wash hands.
  3. 3. In a nonstick skillet over medium heat, melt butter. Brown turkey roll-ups in butter.
  4. 4. Place roll-ups in slow cooker. In medium bowl stir together cream of mushroom soup, sherry and black pepper. Pour over roll-ups in slow cooker.
  5. 5. Cook on low in slow cooker for 4 to 5 hours.

Cheesy Turkey Lasagna

We’re bracing for a blizzard again in Iowa.   This has been an exceptionally cold winter, but our snowfall total has been low.  Normally, we would be thrilled about below-average snow fall.  But parts of our state experienced a drought two years in a row, so we need the moisture that snow provides. 

The snow is bringing more bitter cold temperatures with it.  But don’t worry, our turkeys will be safe and warm inside our barns.

And this Cheesy Turkey Lasagna (with spinach!) will keep you warm, as well!

Ingredients
  1. 1 Cup Minced onions
  2. 3 Cups Chopped cooked turkey
  3. 10 oz Frozen, chopped spinach, thawed and drained, pat dry
  4. 4 Cups Grated mozzarella cheese
  5. 2 Cups Parmesan cheese
  6. 1 Cup Ricotta cheese
  7. ½ tsp Rosemary
  8. 1 tsp Dried Oregano
  9. ½ tsp Pepper
  10. ¼ tsp Salt
  11. 1 tsp Lemon juice
  12. 10 OZ can Cream of Chicken soup
  13. ½ Cup Sour cream
  14. ½ Cup Milk
  15. 9 Lasagna noodles
Instructions
  1. Wash hands.
  2. Sauté minced onions with 1 T. olive oil.
  3. Mix onions together all remaining ingredients except noodles.
  4. Put 3 noodles on the bottom of 9” x 13” baking pan/dish and top with a layer of the mixture. Repeat 2 more times alternating with noodles and mixture.
  5. Bake for 1 hour at 350 degrees.

  1. 1 cup chopped turkey ham
  2. 1/3 cup sliced green onion
  3. 1/3 cup finely chopped red bell pepper
  4. 1 (10 ounce) package frozen chopped broccoli, thawed and well drained OR 1 1/2 cups fresh chopped broccoli
  5. 1 cup (4 ounces) shredded mozzarella cheese
  6. 3 eggs
  7. 2 cups low-fat milk
  8. 1 cup all-purpose OR whole wheat flour
  9. 1/4 cup grated Parmesan cheese
  10. 1/2 teaspoon lemon pepper seasoning
  11. 1/2 teaspoon dried basil leaves
Instructions
  1. 1. Wash hands.
  2. 2. Arrange turkey ham in a greased 13x9x2 inch baking pan. Top with green onion, red pepper, broccoli and mozzarella cheese.
  3. 3. In a large bowl combine eggs, milk, flour, Parmesan cheese, lemon pepper seasoning and basil. Beat together with a wire whisk until smooth. Pour evenly over turkey mixture in baking dish. Cover and refrigerate up to 24 hours, if desired.
  4. 4. Bake, uncovered in a preheated 425 degree oven for 30 minutes or until a knife inserted near center comes out clean.

Ingredients
  1. Butter-flavored nonstick spray OR 1/4 cup butter or margarine, softened
  2. 8 slices rye bread
  3. 1/4 cup Thousand Island dressing
  4. 4 slices Swiss cheese
  5. 1 pound thinly sliced cooked turkey breast
  6. 1/2 cup sauerkraut, well drained
Instructions
  1. 1. Wash hands.
  2. 2. Spray one side of each bread slice with nonstick spray. Spread the other side of each slice of bread with dressing.
  3. 3. Top four of the bread slices (dressing side up) with 1 slice cheese, 4 ounces sliced turkey and 2 tablespoons well-drained sauerkraut. Place remaining bread slices atop each sandwich.
  4. 4. Heat a large skillet over medium high heat. Cook sandwiches until browned, then turn and cook until heated through and cheese is melted.
Notes
  1. Makes 4 servings.

  1. 8 ounces rotini pasta, cooked according to package directions
  2. 1 cup cubed cooked turkey
  3. 1 (4 ounce) can sliced black olives, drained
  4. 2 ounces Pepper Jack cheese, cut into 1/4 inch cubes
  5. 2 cups seeded and chopped tomatoes, divided
  6. 4 green onions, thinly sliced
  7. 1 teaspoon cilantro leaves
  8. 3 tablespoons light olive oil
  9. 2 tablespoons white wine vinegar
  10. 1 teaspoon minced garlic
  11. 1/2 teaspoon cumin
  12. 1/2 teaspoon chili powder
Instructions
  1. 1. Wash hands.
  2. 2. In large bowl combine pasta, turkey, olives, cheese, 1 cup tomatoes and green onion.
  3. 3. In blender or food processor combine cilantro, remaining tomatoes, oil, vinegar, garlic, cumin and chili powder. Process until smooth.
  4. 4. Combine dressing and salad mixture. Toss to coat. Refrigerate until serving.

Ingredients
  1. 4 Tbs. unsalted butter for sauce and some for toasting the bread
  2. 8 slices sourdough or French bread about 1-inch thick
  3. 2 Tbs. Dijon mustard
  4. 16 thin slices roast turkey breast
  5. 3 medium scallions, thinly sliced
  6. 2 Tbs. all-purpose flour
  7. 3/4 cup milk
  8. 1/2 cup brown or dark amber ale, such as Newcastle
  9. 6 oz. aged English Cheddar (White Cheddar) Cheese, finely grated (about 1-1/2 cups)
  10. 1 tsp. Worcestershire sauce
  11. Salt and freshly ground black pepper
Instructions
  1. Position a baking rack 4 to 5 inches from the broiler and heat the broiler on high.
  2. Lightly butter both sides of each slice of bread. Broil for 2 minutes on each side. Smear one side of each slice of bread with the mustard. Set the bread slices mustard side up on the baking sheet and top with the turkey.
  3. Melt 2 Tablespoons of butter in a 2-quart saucepan over medium heat and add the scallions. Cook for 1 minute, stirring often. Whisk in the flour and cook for 1 minute more, stirring often. Add the milk and beer; whisk until thick and bubbling, about 2 minutes. Add all but 1/4 cup of the cheese, the Worcestershire, and 1/2 tsp. pepper and whisk until bubbling, just a few seconds. Season to taste with salt and pepper.
  4. Spoon 1/4 cup of the cheese sauce over each sandwich. Sprinkle with the remaining cheese.
  5. Broil until bubbling and browned, 4 to 5 minutes. Cool for a couple of minutes before serving.
  6. Variation: Add cooked turkey bacon and sliced avocado on top of the turkey prior to adding the sauce.
