Slow Cooker Turkey Tacos

Turkey tacos are a favorite among turkey lovers, and this slow cooker version will have them coming back for seconds.  Tender turkey breast with avocado, salsa, and pepper jack cheese combine for an easy family meal that cooks in the crock pot.

Ingredients
  1. 2 onions, coarsely chopped
  2. 6 pounds bone-in turkey breast, skin and fat removed
  3. 1 (10 ounce) can enchilada sauce
  4. 8 hard taco shells
  5. 3 cups shredded romaine lettuce
  6. 1 small avocado, pitted, peeled and chopped
  7. 1 cup tomato salsa
  8. 1 cup shredded pepper jack cheese
Instructions
  1. Place onions in the bottom of a slow cooker.
  2. Sprinkle turkey with salt and place in slow cooker, meat side up. Cover and cook on low until internal temperature of turkey registers 165 degrees, about 4 – 6 hours.
  3. Remove turkey meat from bone, shred it then toss with enchilada sauce.
  4. Place turkey in taco shell and top with lettuce, avocado, salsa and shredded cheese.

For the turkey
  1. • 1 tablespoon salt
  2. • 1 tablespoon celery seeds
  3. • 1 teaspoon freshly ground black pepper
  4. • 1 (4 to 8 pound) bone in turkey breast, thawed if frozen
  5. • 3/4 medium yellow onion, cut into 3 pieces
For the serving sauces
  1. • ½ cup Frank’s Red Hot sauce
  2. • ½ cup unsalted butter
  3. • 2 tablespoons water
  4. • 1 tablespoon cornstarch
  5. • 1/2 cups heavy cream
  6. • 8 ounces blue cheese, crumbled into small pieces
For the turkey
  1. 1. Heat the oven to 350°F and arrange a rack in the lower third.
  2. 2. Combine the measured salt, celery seeds, and pepper in a small bowl.
  3. 3. Rub the salt mixture all over the outside of the turkey and place the onion pieces inside the cavity. Place the turkey breast on a roasting rack set in a roasting pan. Cover with lid or roasting pan cover.
  4. 4. Roast until a meat thermometer inserted into the thickest part of the breast registers 170°F. About 1 ½ to 3 ¼ hours depending on the size of the turkey breast. Remove the turkey from the oven and let it rest for 30 minutes before carving.
For the serving sauce
  1. 1. Place the hot sauce and butter in a small saucepan over low heat and stir until the butter is melted and the mixture is combined.
  2. 2. Whisk the water and cornstarch together in a small bowl; add to the butter mixture and stir until thickened.
  3. 3. Add the cream to the pan and stir well. Remove from the heat. Whisk in the cheese crumbles.
  4. 4. Taste and season with salt and pepper as needed.
  5. 5. Serve warm.
