Recently, we stumbled upon The Slow Roasted Italian – this husband/wife team creates amazing recipes and blogs about them together.  Donna is originally from Florida, but Chad hails from Iowa (or “God’s Country,” as they call it on their blog!)

Turkey Wild Rice Salad Recipe
This award winning salad from the Iowa State Fair is a great make-ahead meal. Stir in the grapes and cashews just before serving.

Ingredients
  1. 2/3 cup mayonnaise
  2. 1/3 cup light sour cream
  3. 2 tablespoons lemon juice
  4. 1/4 teaspoon dried tarragon
  5. 4 cups cubed cooked turkey
  6. 3 cups cooked wild rice
  7. 1/3 cup finely sliced green onion
  8. 1 (8 ounce) can sliced water chestnuts, drained and diced
  9. 1/2 teaspoon salt
  10. 1/2 teaspoon black pepper
  11. 1 teaspoon curry
  12. 1 cup halved green grapes
  13. 1 cup salted cashews
Instructions
  1. 1. Wash hands.
  2. 2. In a medium bowl, blend together mayonnaise, sour cream, lemon juice and tarragon; set aside.
  3. 3. In a large bowl combine turkey, wild rice, onions, water chestnuts, salt, pepper and curry. Stir in mayonnaise mixture until well blended.
  4. 4. Cover and refrigerate 2 to 3 hours before serving.
  5. 5. Before serving, fold in grapes and cashews.

Ingredients
  1. 1 cup cranberry juice
  2. 2 teaspoons sugar
  3. 1 teaspoon cornstarch
  4. 1/4 cup raspberry vinegar OR apple cider vinegar
  5. 1 cup frozen raspberries in syrup
  6. 1/2 cup hazelnuts
  7. 1 1/3 cups coarsely grated Parmesan cheese
  8. 1 cup finely grated Parmesan cheese
  9. 4 cups spinach leaves, torn into pieces
  10. 1 pound cubed cooked turkey
Instructions
  1. 1. Wash hands.
  2. 2. In a medium saucepan, stir together cranberry juice, sugar and cornstarch. Bring to a boil, stirring often. Cool. Add raspberry vinegar and frozen raspberries. Set aside.
  3. 3. Toast hazelnuts on a baking sheet in a preheated 350 degree F. oven for about 10 minutes. Cool. Coarsely chop.
  4. 4. Prepare Parmesan shell by spraying an 8-inch nonstick skillet with nonstick spray. Heat pan over medium heat.
  5. 5. For each shell add 1/3 cup coarsely graded Parmesan to the bottom of the pan, distributing the cheese evenly across the pan. Allow the cheese to bubble for about 30 seconds before adding an additional 1/4 cup of finely grated Parmesan.
  6. 6. When the cheese starts to turn golden brown, remove from the pan and place over a mold or an inverted small stainless steel bowl. Cool.
  7. 7. In a large bowl, toss spinach, turkey and hazelnuts. Divide salad among the cooled Parmesan shells. Serve immediately with the dressing on the side.

  1. Makes 4 servings.

Ingredients
  1. 8 ounces rotini pasta, cooked according to package directions
  2. 1 cup cubed cooked turkey
  3. 1 (4 ounce) can sliced black olives, drained
  4. 2 ounces Pepper Jack cheese, cut into 1/4 inch cubes
  5. 2 cups seeded and chopped tomatoes, divided
  6. 4 green onions, thinly sliced
  7. 1 teaspoon cilantro leaves
  8. 3 tablespoons light olive oil
  9. 2 tablespoons white wine vinegar
  10. 1 teaspoon minced garlic
  11. 1/2 teaspoon cumin
  12. 1/2 teaspoon chili powder
Instructions
  1. 1. Wash hands.
  2. 2. In large bowl combine pasta, turkey, olives, cheese, 1 cup tomatoes and green onion.
  3. 3. In blender or food processor combine cilantro, remaining tomatoes, oil, vinegar, garlic, cumin and chili powder. Process until smooth.
  4. 4. Combine dressing and salad mixture. Toss to coat. Refrigerate until serving.

  1. Makes 6 servings.
